Crafted in Seki, Gifu—Japan’s historic blade-making capital with centuries of tradition—this compact knife combines a polished stainless steel blade with a solid brass handle. Originally designed for semi-hard cheeses like Comté, Gouda, or Emmental, its sharp, refined edge makes it equally suited for cutting fruit, slicing salami, or even peeling pears at the table.
The knife’s small size (blade length approx. 2.5") and rounded tip make it approachable and safe for tabletop use, while the subtle angle between blade and handle offers a smooth, precise cut. Over time, the brass handle will naturally deepen into a rich patina, adding character with each use. If you prefer to maintain its original glow, it can be easily polished back to shine.
